Chanukah-sign me up

we started to teach the kids at church last week about Chanukah...
and that is when I learned the most amazing thing E.V.E.R.
they celebrate with fried foods...
...like donuts...yeah...DONUTS!
and gamble play dreidel ...with chocolate...
....
I was already to sign up...
and then
then....
then... we discovered Latkes....
oh.my.word!
Yeah, we have now decided to become Messianic Jews so we can celebrate...
...
or maybe will just eat the food...
anyways...

Potato Latkes
2 cups peeled and shredded potatoes
     (this is so easy with a food processor...can't imagine doing it without!)
1 tablespoon grated onion (we used more)
3 eggs, beaten
2 tablespoons all-purpose flour
1 1/2 teaspoons salt
1/2 cup oil for frying or more...

Place the peeled shredded potatoes in a cheesecloth (paper towel or very clean dish towel) and wring, extracting as much moisture as possible.
In a medium bowl stir the potatoes, onion, eggs, flour and salt together.
In a large heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down on them to form 1/4 to 1/2 inch thick patties. Brown on one side, turn and brown on the other. Let drain on paper towels. Serve hot!
all the links say to serve with applesauce or sour cream...we have neither, but I plan to pick some up so when we make these again tomorrow night we can try it with both!

BLOG EDIT....this is VERY important...latkes are yummy and amazing if eaten HOT...cold latkes are like a nasty fish stick....don't even try it...

I've always said I wanted to become Jewish...for the food and tradition!!!!!!
And I've always wanted to make these....I think I finally will :)
